We consolidate as a national reference.

If in 2015 we achieved it, it was thanks to the tandem formed by Jon Ayala from the Laia Erretegia grill house in Hondarribia, in 2016 we bet on Ignacio Touriño, a young broiler of the ambitious project Lomo Alto BCN from Barcelona. Directed by the gastronomic team of El Nacional BCN, Michel Gradeler (in the photo).


The IRUKI bone-in ribeye steak is recognised as the best of its kind in Spain, an accolade obtained at the Gastronomika competition in 2015 and 2016

Hard work has its reward.

We proposed the challenge to Jon Ayala of Laia Erretegia, Eskerrik asko! and we went to work. Selection of the best ribeye, race, origin, maturation, temperature, cut, carving, tests and more tests… Thanks to all the human team and the push of the captains who run the boat of Iruki, Jose Luis Etxarri and Borja Zubiaurre, challenges become fulfilled.
